Ingredients

  • Little Northern Bakehouse Everything Bagels

  • Vegan Cheddar Cheese (2-6 Slices)

  • Vegan Bacon (2-8 Slices)

  • Sliced Tomatoes (2-6 Slices)

  • Indian Black Salt or Himalayan Pink Salt (½-1 Tsp)

  • Black Pepper (½-1 Tsp)

  • Chickpea Egg Scramble:

  • Grapeseed Oil (3 Tbs) To Saute

  • Diced White Onions (¼ Cup)

  • Diced Green Onions (¼ Cup)

  • Chickpea Flour (1 Cup)

  • Indian Black Salt or Himalayan Pink Salt (½-1 Tsp)

  • Black Pepper (½-1 Tsp)

  • Nutritional Yeast (2.5 Tbs)

  • Turmeric (⅛-¼ Tsp)

  • Baking Powder (½ Tsp)

  • Grapeseed Oil (1 Tbs)

  • Maple Syrup (1 Tbs)

  • Water (¾-1 Cup)

Instructions

In a medium bowl, mix together Chickpea Flour, Turmeric, Indian Black Salt, Black Pepper, Nutritional Yeast, and Baking Powder. Mix this together well and slowly add in the Water and Grapeseed Oil while mixing until smooth.

Heat a large pan with a little bit of Grapeseed Oil.

Cook the Diced White Onions and Green Onions in the pan until they are slightly translucent and they are soft all the way through. Season with salt and pepper. Add a little bit of Grapeseed Oil to the large pan.

Pour ½ Cup of the Chickpea Egg Mixture into the pan until it fully covers the bottom.

Let the Chickpea Eggs cook for 1-2 minutes, and then once the liquid begins to turn into a solidified consistency, use your spatula to scramble and mix them together just like you would with eggs.

Continue to cook the Chickpea Eggs until they are fluffy and there is no liquid. Add more salt and pepper if needed.

Next, cook the vegan bacon with a little bit of oil and maple syrup. Cook for 3-8 minutes or until crispy.

Toast the everything bagel buns with two slices of plant-based cheese. Toast them until the cheese is fully melted and the bread is crispy.

Build the bagel sandwich with the bottom, toasted bagel, melted cheese, slice of tomato, black salt and black pepper, crispy, vegan bacon, cooked chickpea, eggs, another slice of tomato, more black salt, and pepper, and top it with the bagel bun with melted cheese. Serve with a side of maple syrup.
