- Shredded Firm Tofu (2-3 Cups)
- Maple Syrup or Agave (2 Tbs)
- Vegan Worcestershire Sauce or Soy Sauce (3 Tbs)
- Liquid Smoke (1 Tsp)
- Steak Seasoning (2 Tbs)
- Ground Chipotle Pepper (½ Tbs)

Instructions
- To make the chipotle tofu, freeze the tofu for 1 hour and then let it defrost, press and remove the excess liquid from the tofu.
- Shred the tofu into a container and add in Maple Syrup, Vegan Worcestershire Sauce, Liquid Smoke, Nutritional Yeast, Steak Seasoning, Ground Chipotle Pepper, and Smoked Paprika. Mix and let it marinate while you work on the other ingredients.
- Set your oven to 425 F to bake the potatoes.
- To make the roasted potatoes wash, chop and place the potatoes on a covered baking sheet. Season the potatoes with chopped green onion and poultry seasoning with a splash of oil.
- Mix and bake the potatoes at 425 F for 18-25 minutes until the potatoes are soft all the way through.
- Make the chipotle tofu in a large pan by cooking diced bell peppers with oil and season with steak seasoning. Cook peppers until they are soft and then add in marinated tofu. Add any additional seasoning plus the hot sauce to the tofu and let it cook on medium-high covered, periodically mixing for 5-10 minutes until the tofu bottom pieces get crispy and dark brown. Let this cook covered on medium-low heat until ready to serve.
- Make the beans in a pot by cooking the diced red onions in oil and season with salt. Cook the onions until soft and translucent.
- Add the black beans to the onions and season with fajita seasoning. Cook covered on medium-heat for 5-8 minutes to let the seasoning cook into the beans.
- Make the cabbage slaw by mixing together chopped cabbage and Italian vinaigrette.
- Build the bowl with a bed of lettuce, then add on potatoes, black beans, tofu, cabbage, and top with avocado slices and chopped green onion.
