This radical recipe is a tasty twist on my favorite appetizer, Spinach and Artichoke Dip! Made with zesty, roasted artichokes, thick + creamy Follow Your Heart cheese sauce, fresh spinach, and long, lovely noodles, all brought together with a surprise crunch from pistachios and fresh parsley. So much yum in just one bite! What’s fabulous about this recipe is that you can actually use any kind of pasta that you enjoy or add in cooked chickpeas for extra plant protein. INGREDIENTS:

ROASTED ARTICHOKES:

Artichoke Hearts (2 Cups)

Italian Seasoning (2 Tbs)

Poultry Seasoning (2 Tbs)

CREAMY SPINACH ARTICHOKE SAUCE:

Vegan Butter or Oil (4 Tbs)

Diced White Onion (½ Cup)

Minced Garlic (2 Tbs)

@followyourheart Cream Cheese (1 Cup)

Plain Hummus (2 Cups)

Plant Based Milk (2-4 Cups)

Nutritional Yeast (3 Tbs)

Red Pepper Flakes (½-1 Tsp)

Garlic Powder (2 Tbs)

Onion Powder (2 Tbs)

Nutmeg (1/4 Tsp)

@followyourheart Parmesan Cheese (1 Cup)

@followyourheart Mozzarella Cheese (1 Cup)

Salt and Pepper to Taste 

Chopped Spinach (3-5 Cups)

Roasted Artichokes (2 Cups)

SPAGHETTI + GARNISH:

Gluten-Free Pasta Noodles (Make as much as desired)

@followyourheart Parmesan Cheese (¼ Cup)

Minced Fresh Parsley (4 Tbs)

OPTIONAL-Crushed Pistachios (4 Tbs)

INSTRUCTIONS:

  1. Set the oven to 420F and line a baking sheet.

  2. On the lined baking sheet add the artichoke hearts, Italian, and poultry seasoning. Combine everything together well until all of the artichokes are fully coated in seasoning. 

  3. Bake the seasoned artichokes at 420F for 18-25 minutes or until slightly crispy all around. Flip them halfway through roasting.

  4. While the artichokes are baking, make the cheese sauce in a large pan on high heat by first sautéing diced white onions in oil with a splash of salt. Sauté the onions until translucent and soft. Add in minced garlic halfway through sautéing the white onion. 

  5. Once the garlic and onion is soft and lightly browned, add in the hummus, Follow Your Heart Cream Cheese, and plant-based milk. Mix together.

  6. Add in the dry seasoning and mix together well. Add more plant-based milk to make it easier to whisk around. 

  7. Once everything is combined, add in the Follow Your Heart Parmesan and Mozzarella Cheese. Mix the cheese in until it is fully melted and there are no clumps or lumps in the sauce.

  8. Add the juice of one lemon to the sauce, whisk together, and then add in the chopped spinach. Mix the spinach into the sauce until it is fully wilted and shrunken by the creamy sauce. 

  9. Once the artichokes are done roasting in the oven, add them to the large pan of creamy sauce. Mix everything in until well combined. Add salt and pepper to taste if needed. 

  10. When you are ready to serve, boil the noodles until al dente (slightly still firm) and then mix together your desired amount of noodles with a healthy amount of creamy spinach artichoke sauce. 

  11. Garnish the pasta with Follow Your Heart Parmesan, crushed pistachios, and minced parsley.

  12. Sing your song, do your dance, speak your truth, and enjoy the Creamy Spaghetti!
