INGREDIENTS:
CHEESEBURGER TAQUITOS:
Shredded Lettuce (¼ Cup)
Large Gluten-Free Tortillas (8-10)
Vegan Cheddar Cheese (1.5 Cups)
Grapeseed Oil for Frying (5-8 Cups)
Gluten-free Flour + Water Mixed Into a Paste (1 Cup)
Minced Fresh Herbs for Garnish (¼ Cup)
Diced Tomatoes for Garnish (¼ Cup)
CHEESEBURGER FILLING:
Plant Based Butter or Oil (4 Tbs)
Diced White Onion (½ Cup)
Diced Green and Red Bell Peppers (1.5 Cups)
@EatPlantBoss Meatless Crumbles (2-3 Cups)
Steak Seasoning (3 Tbs)
Smoked Paprika (3 Tbs)
Maple Syrup (3 Tbs)
Minced Pickles (¾ Cup)
Diced Tomatoes (¾ Cup)
Ketchup (⅓ Cup)
Mustard (⅓ Cup)
Salt and Pepper to Taste if Needed
SUPER SPECIAL SAUCE:
VeganMayonnaise (1 Cup)
Minced Pickles (⅓ Cup)
Sugar-Free Ketchup (¼ Cup)
Mustard (¼ Cup)
Onion Powder (1.5 Tbs)
Apple Cider Vinegar (1-2 Tbs)
Maple Syrup (½-1 Tbs)
(MIX TOGETHER WELL)
INSTRUCTIONS:
Heat the oil in a large pan to prepare for deep frying the Taquitos or set the oven to 425F to bake.
In a large bowl soak the Plant Boss meatless crumbles in water for 3 minutes and then strain. Set aside.
In a large pan on high heat, sauté the diced white onions in oil. Sauté them until they are translucent and slightly browned.
Add diced red and green bell peppers to the pan and sauté them with the white onions until they are slightly soft.
Add the rehydrated Plant Boss meatless crumbles to the sautéed vegetables and mix everything together well. Add in the seasoning and spice
Add in all of the other ingredients for the cheeseburger filling and mix together well until fully combined.
In a medium bowl combine water and gluten-free flour to make a thick flour paste.
On a flat surface lay a large tortilla and fill the closest edge towards you with a few spoonfuls of the cooked cheeseburger filling.
Sprinkle in a healthy helping of vegan cheddar cheese, roll all of the ingredients close together towards you tight, roll in the flap of the tortilla into the filling and continue rolling away from your body.
Using the thick flour paste, paint the inner edge of the tortilla and then continue rolling to fully close and seal the edges of the taquito.
Do this same fill, roll, and seal process with all of your tortillas and set aside in the fridge until you are ready to deep fry.
Once the oil is hot and ready to deep fry, three at a time put the taquitos into the oil and let them cook until all sides are golden brown. Use tongs to move the taquitos around and make sure both sides are nice and crispy. If you are baking them, let them bake on a covered baking sheet at 425F for 15-25 minutes, flipping them halfway through.
Mix together all of the ingredients for the super special sauce and set aside.
When all of the taquitos are done frying, place them on a towel + plate to remove any excess oil.
Plate the taquitos by piling them high on a clean plate and drizzle over the super special sauce, garnish with chopped lettuce, minced fresh parsley, and diced tomatoes. Serve with a side of super special sauce.
