Ingredients

  • Fresh Small Cucumber (3-8 cucumbers)

  • Pink Salt (2 Tsp)

  • White Vinegar (3 Tbs)

  • Red Chili Flakes (1-3 Tsp)

  • Crushed Garlic (3 Tbs)

  • Minced Green Onion (¼ Cup)

  • Sesame Oil OR Liquid Aminos (¼ Cup)

  • Maple Syrup (2 Tbs)

  • OPTIONAL Toasted Sesame Seeds (2 Tbs)

Instructions

Wash and lay the cucumbers horizontally between 2 chopsticks.

Make thin slices in the cucumbers perpendicular to the chopsticks. The chopsticks should prevent the knife from fully slicing the cucumber. Each slice should be roughly 1/8 inch apart.

Flip the cucumber over and with the two chopsticks below the cucumber slice the cucumber at an angle into thin pieces while the chopsticks catch the bottom of the knife.

Slowly wiggle the cucumber apart until an accordion-like spiral can be seen in the cucumber and add it to a bowl.

Slice up the rest of your cucumbers with the same accordion-like technique and set them all into a bowl with a sprinkle of salt to lightly cover and season the cucumbers.

In a separate cup make the sauce by mixing together white vinegar, red chili flakes, crushed garlic, green onion, sesame oil, liquid aminos, maple syrup and sesame seeds.

Pour the sauce over the salted cucumbers and delicately mix everything together. Garlic with a sprinkle of green onion.
