INGREDIENTS:

CRISPY DEEP FRIED MUSHROOMS:

Mushrooms (2-4 Cups)

Chopped Fresh Herbs (¼ Cup)

Oil for Frying (3-5 Cup)

FLOUR BATTER:

Gluten-Free Flour (2 Cups)

Steak Seasoning (¼ Cup)

Garlic Powder (3 Tbs)

Onion Powder (3 Tbs)

Cayenne Pepper (1-2 Tsp)

Salt and Pepper to Taste

Sparkling Water (2 Cups)

ZERO WASTE BREAD CRUMBS:

Gluten-Free Bread Scraps (2 Cups)

Oil (¼ Cup)

Italian Seasoning (¼ Cup)

Smoked Paprika (2 Tbs)

Salt and Pepper to Taste

DIPPING SAUCE:

Vegan Mayonnaise or Hummus (1.5 Cups)

Dairy-Free Ranch Seasoning (3 Tbs)

Pickle Juice (2-3 Tbs)

Salt and Pepper to Taste

INSTRUCTIONS:

  1. Heat your oven to 400° And prepare to bake the bread crumbs by lining a large baking sheet.

  2. On the lined baking sheet, season the bread scraps with Italian seasoning, smoked paprika, salt, and pepper, and mix everything together with your hands until all of the bread scraps are fully coated in seasoning and a light coating of oil.

  3. Bake the seasoned bread scraps for 5 minutes at 400°, give it a shake to make sure all pieces are getting toasted and bake for another 3-5 minutes or until everything is golden brown and crispy.

  4. Once the bread scraps are crispy and baked, add them to a food process and pulse the scraps until they are fine, small, and turn into bread crumbs. Set the bread crumbs to the side as you work on the other ingredients.

  5. Make the flour batter by first mixing together gluten-free flour, steak seasoning, garlic powder and onion powder, cayenne pepper, salt and pepper to taste. mix this together well and slowly add in the sparkling water until a wet batter forms. It should be the same thickness as ranch.

  6. One at a time, dip the mushrooms into first, the wet batter, fully coating and covering it and then coat the battered mushrooms in your homemade bread crumbs. Make sure every bit of the mushroom is covered!

  7. Once you have all of your mushrooms covered in batter and bread crumbs heat oil in a large ban to deep fry the mushrooms. You can also make the mushrooms at 425° for 12-18 minutes, flipping them halfway through.

  8. When you are deep frying the covered mushrooms, fry no more than five at a time and make sure that they do not touch while getting crispy in the hot pan. Once they are golden brown and fried for a few minutes on each side, set them aside on a towel covered plate to soak up all of the excess oil.

  9. And when you are ready to serve, play the fried mushroom and serve them with the side of dipping sauce, and garnish with fresh herbs like green onion all over

  10. Sing your song, do your dance, speak your truth and enjoy the fried mushrooms!
