Ingredients

  • Carrots (3-6 Carrots)

  • Cooked Glass Noodles (2 Cups Cooked)

  • Scotch Boys Jerk Sauce (2 Tbs)

  • Minced Green Onion (¼ Cup)

  • Fresh Ginger (1 Tbs)

  • Apple Cider Vinegar (1 Tbs)

  • Maple Syrup (1 Tbs)

  • Sesame Oil (2 Tbs)

  • Yellow Mustard (3 Tbs)

  • Sesame Seeds (2 Tbs)

Instructions

Cook the glass noodles in hot boiling water for 8-12 minutes and then rinse them with cold water before serving.

Wash well and thinly skin the carrots (longways) to create long strips until you can’t skin anymore off of the carrots. Add the carrot strips into a large bowl and sprinkle a bit of salt on top. Mix together well and set aside.

Add cooked glass noodles to the bowl of carrots.

Make the Mustard Jerk Sauce by mixing together Scotch Boys Jerk Sauce, Minced Green Onion, Fresh Ginger, Apple Cider Vinegar, Maple Syrup, Sesame Oil, Yellow Mustard, and Sesame Seeds. Mix until all the ingredients are well combined.

Pour the Mustard Jerk Sauce over the noodles and mix everything together well. Garnish with chopped green onions and sesame seeds.
