It’s official! French fries are my favorite food. And you better believe that the fresh Rosemary and Garlic in this righteous recipe take it to the next level! For these Fries I used my Aero Garden to harvest fresh Parsley, Dill and Rosemary, fried up some thinly sliced White Potatoes in Grapeseed Oil and coated the golden goodies in Pink Salt and plant-based Parmesan. Served with a side of super Creamy Ranch Dip and a splash of parsley, you’ll want to eat the whole plate!

Ingredients

  • Grapeseed Oil (6 Cups)

  • Fresh Rosemary (5-7 Stems)

  • Fresh Garlic Cloves (4-6 Cloves)

  • White Potatoes (2 Potatoes)

  • Cold Water

  • Salt and Pepper to Taste

  • Vegan Parmesan (⅓ Cup)

  • Vegan Parmesan (3 Tbs)

  • Minced Parsley (3 Tbs)

  • Soy-Free Vegan Mayonnaise or Hummus (1 Cup)

  • Lemon Juice (2 Tbs)

  • Onion Powder (1 Tbs)

  • Plant-Based Milk (1-2 Tbs)

  • Minced Garlic (1 Tbs)

  • Fresh Minced Dill (1.5 Tbs)

  • Salt and Pepper to Taste

Instructions

Let’s Start

Wash and scrub the potatoes so that they are clean. You can also skin the potatoes if you would like to.

Slice the potatoes into long, thin sticks by first slicing off the sides to create a rectangle and then slice that down into thin pieces.

Soak the chopped potatoes in cold water for at least two hours in the refrigerator. Soaking them overnight is best.

Heat the Grapeseed Oil to prepare for deep frying OR you can set the oven to 400F to bake the Fries.

Once the oil is hot, first fry the fresh Rosemary and Garlic cloves for 2-4 minutes.

Remove the chopped potatoes from the cold water and pat them dry with a towel until most of the water is absorbed.

Leave the Rosemary and Garlic cloves frying in the oil on high heat while you add in a batch of 6-10 sliced potatoes, frying one batch at a time. Fry the potatoes until they are golden brown on all sides and you can tell that they are firm with the touch of some tongs. (6-12 minutes) You can also bake the potatoes on a covered baking sheet for 40-50 minutes.

Make the creamy ranch dressing in a medium bowl by whisking together all of the ingredients. Add more plant-based milk if necessary.

Transfer the fried potatoes + Rosemary to a kitchen towel to absorb any excess oil.

Add salt and vegan Parmesan to the fries and shake them up so they are fully seasoned on all sides.

Serve the Fries on a big plate next to a side of creamy ranch dressing. Garnish the Fries with minced parsley.
