  • Chopped Fresh Herbs (¼ Cup)

  • Hot Sauce of Choice (3 Tbs)

  • Creamy Vegan Sauce of Choice (¼ Cup)

  • Diced Tomatoes (⅓ Cup)

  • Toasted Corn Tortillas (4-8)

  • FAJITA LIME BEANS:

  • Cooked Black Beans (2 Cups)

  • Your Favorite Savory Seasonings (I love to use Fajita Seasoning) (2 Tbs)

  • Agave or Maple Syrup (1.5 Tbs)

  • Fresh Lime Juice (1 Tbs)

  • Salt and Pepper to Taste

  • BAKED SWEET POTATOES:

  • Chopped Sweet Potatoes (3 Cups)

  • Oil or Vegetable Broth

  • Your Favorite Savory Seasonings (I love to use Za’atar Spice and Smoked Paprika) 3 Tbs)

  • SAVORY QUINOA:

  • Diced Red Onion (⅓ Cup)

  • Quinoa (2 Cups)

  • Water (4 Cup)

  • Your Favorite Savory Seasonings (I love to use Poultry Seasoning and Cayenne)(3 Tbs)

  • Chopped Fresh Herbs of Choice (¼ Cup)

  • Salt and Pepper to Taste

Instructions

In a large pot combine together diced red onions, sauté in oil, then add in quinoa, water, your favorite savory seasoning, fresh herbs of choice, and salt and pepper to taste. Mix together and cook covered for 25-30 minutes until the quinoa is soft and cooked to your liking. Set aside.

Chop the sweet potatoes into small pieces and coat them in savory seasoning with a splash of oil. Completely cover the potatoes so all of the pieces are coated in seasoning and bake them on a covered baking sheet at 415°F for 20-30 minutes.

In a pot, heat up the cooked black beans and season with your favorite savory fajita seasoning, maple syrup or agave, fresh lime juice, salt and pepper to taste. Mix and cook together the beans with seasoning then smash them and set aside.

Toast the corn tortillas until golden brown and crispy and then prepare to build the Tostadas. Smash the cooked sweet potatoes and then build the Tostadas with smashed black beans, then smashed sweet potatoes, then cooked savory quinoa, garnish it with a creamy vegan sauce or hummus, add diced tomatoes, and fresh herbs on top.
