Ingredients

  • Follow Your Heart Sour Cream (1 Cup)

  • Follow Your Heart Soy-Free Vegenaise (1.5 Cup)

  • Plain Hummus (1.5 Cup)

  • Minced White Onions (½ Cup)

  • Crushed Garlic (2 Tbs)

  • Garlic Powder (1 Tbs)

  • Onion Powder (1 Tbs)

  • Smoked Paprika (½ Tbs)

  • Poultry Seasoning (2.5 Tbs)

  • Yellow Mustard (2 Tbs)

  • Maple Syrup (1 Tbs)

  • Minced Chili Peppers or Crushed Red Pepper Flakes (¼-1 Tsp)

  • Chopped Broccoli Florets (5-7 Cups)

  • Follow Your Heart Cheddar Shreds (2 Cups)

  • Salt and Pepper to Taste

  • Vegan Butter or Oil (¼ Cup)

  • Follow Your Heart Parmesan (1 Cup)

  • Crushed Potato Chips (1-2 Cups)

  • Minced Parsley (3 Tbs)

Let’s Start

Heat the oven to 385F and prepare to bake the dish.

In a large bowl combine together: vegan sour cream, vegenaise, hummus, minced white onions, crushed garlic, garlic powder, onion powder, smoked paprika, poultry seasoning, yellow mustard, maple syrup, and red chili pepper flakes. Mix together until all of the ingredients are well combined.

Chop the broccoli into small bite-size florets and boil them in hot water for 3-6 minutes and they are a bright shade of green.

Add the boiled broccoli to the large bowl of ingredients and then add in vegan cheddar shreds, salt, and pepper to taste. Mix everything together until all of the broccoli is fully covered and coated.

Lightly coat the inside of a baking dish with vegan butter on all sides so the broccoli does not burn and stick to the sides.

Pour the broccoli mixture into the buttered baking dish and flatten it out so that the top is a completely even surface.

Sprinkle vegan Parmesan all across the top of the baking dish.

On top of the Parmesan sprinkle crushed potato chips all over, from corner to corner, edge to edge.

In the middle rack, bake the Cheddar Broccoli dish for 18-30 minutes or until it is bubbling all around the edges. You can finish it off by broiling the dish for just a few seconds to get the crispy golden edges on the potato chips.

Remove the dish from the oven and when you are ready to serve, top it with a sprinkle of minced parsley.
